1 tbsp. butter
1 chicken breast cut into pieces*
curry powder or curry paste to taste
1 clove garlic minced OR 1 tbsp. garlic powder
kale or mixed greens
1. Melt butter in pan
2. Add chicken pieces
3. Add seasonings
4. Stir fry until the chicken obtains a brown, crunchy texture
5. Serve over lettuce, kale or mixed greens**
*Serving size – Using a food scale, measure cut pieces of chicken up to 3 oz.
**You can add more vegetables to this stir fry and rather than serve over mixed greens, you can serve over cauliflower rice…Add plan friendly veggies and a splash of balsamic vinegar, and you’ve got a great, saucy stir fry.
